Try Alida Ryder’s Traditional Holiday Rocky Road Bars

Cook from the HeartOver the festive season Alida Ryder, author of Cook from the Heart, shared one of her favourite recipes for the holidays: Rocky Road Bars, which she makes with a variety of additions – from mini marshmallows to pistachios and biscotti.

Try her easy recipe, which makes around 20-30 squares that can be kept in the fridge for a sweet snack and brought out when guests come over:

Rocky Road Bars

400g dark chocolate
1 tablespoon butter
1 tablespoon corn syrup/liquid glucose/golden syrup
50g mini marshmallows (around 1 cup)
100g roasted and salted Brazil nuts
100g glace cherries
50g biscotti (or other biscuits), roughly chopped
